Chee Cheong Fun 猪腸粉
東京でも多くの飲茶レストランで食べる事のできるチョンファン（日本のメニューにはライスクレープと記載されている事も多い）。一般的には上の写真のようなものが多い（具は叉焼）。チョンファンは豚の腸のような形をしている事からその名前が付いたそうだ。シンガポールのチャイナタウンコンプレックスに一件だけ上海猪腸粉（チーチョンファン）を提供しているお店がある。下の写真が上海猪腸粉だ（具は椎茸）。上にかかっているソースは広東飲茶のネギ油醤油ベースではなく、海鮮醤がベースとなっていて、さすがにシンガポールなので、チリサンバルが付いてくる。食感は広東のものと比べると、少ししっかりしている。上海の方が豚の腸に似ていると思うが．．．Chinatown Complex in Singapore sells Chee Cheon Fun […]
